Over Easy Eggs with Sautéed Veggies

My mornings are hectic during the week, and as a result, I usually opt for a breakfast that takes about two minutes to make. That usually ends up being a smoothie.

However, on weekends (or weekdays when I have a bit more time) I like to mix it up, and I also love a warm breakfast on cold days.

This egg dish can be super simple, or a bit more complex if you want to dress it up. For a simple version, just add whatever vegetables you have time/energy to slice and cook. Maybe one day it’s just zucchini and tomato. Another day you may add all of the ingredients. Honestly, it’s hard to mess up.

Ingredients:

2 eggs

A handful of Brussel sprouts, sliced

1 carrot, sliced thin

A handful of kale

1/2 or 1 full clove of garlic

1/4 or 1/2 of a small yellow onion

1 tbsp duck fat or olive oil

1/4 tsp ground cumin

1/4 tsp smoked paprika

Pinch of salt and pepper

Start with your vegetables. Slice them up and set them aside. Heat a small pan over medium heat on the stove with the duck fat or olive oil (I prefer duck fat - more on that below). Once warm, add your onion and cook until translucent. Then add your garlic and sauté for a minute or two. Add your carrot first (it takes the longest to cook), followed by the Brussel sprouts and kale. Add your spices early so they have some time to cook down, along with your salt and pepper to taste. While your veggies are cooking, take out another small pan and cook your eggs however you like them. I like mine over-easy. You can sprinkle your eggs with salt and pepper, or you can sprinkle some paprika over them (that’s my favourite).

In order to add a little Canadian flare, I like to cook my eggs and veggies in duck fat. I purchase it from the grocery store near my office on the Quebec side of the Ottawa river, but you can buy it at a specialty food store or even make your own by rendering it off a duck breast. It’s super easy, and very healthy, and adds a lovely flavour.

Once your veggies are cooked to your liking, turn them out onto a plate and top with the eggs. If you want to get a little more fancy (like maybe you’re feeding guests) then you could grab some greek yogurt and add a finely minced clove of garlic, salt and pepper and a squeeze of lemon juice to serve alongside.
