Breakfast Sweet Potato
Breakfast does not just have to be oatmeal or cereal. Some of you may even be tired of eggs every day. Breakfast can be boring, especially when most of us need to make it quickly so we can get out the door.
I love using a sweet potato as a hearty breakfast. Full of nutrients, this carb heavy root vegetable will wake up your body and brain. And it can be SO fast! A small sweet potato cooks in the microwave in 5-6 minutes. If you don’t want to use a microwave, you could roast up some in the oven on a Sunday and then keep them in the fridge throughout the week! I toss a few toppings on mine for an additional boost of health and energy, and you can use whatever you have in your pantry.
Ingredients:
1 sweet potato
A pinch of salt
1-2 spoonfuls of greek yogurt
1 tbsp almond butter
1 tsp sunflower seeds
1 tsp chia seeds
1 tbsp maple syrup
1 pinch of cinnamon
Instructions:
First cook the sweet potato. If using the microwave, poke holes in the potato using a fork and then microwave (in a safe dish) for 5-6 minutes. Depending on the size of your sweet potato, it may take more time. If using the oven, prep on a Sunday and roast at 400 degrees for about an hour.
Once cooked, slice your sweet potato in half and use a fork to fluff up the flesh. I sprinkled mine with a bit of salt (and admittedly some butter) at this stage before topping it. Then top with whatever toppings you want! I added greek yogurt, almond butter, sunflower seeds, chia seeds, cinnamon and maple syrup.
