Easy Kitchen Sink Salad

I love making salads. I find that as long as I include smoothies and salads in my diet on a regular basis, then my body (and mostly my gut) is happy. This salad is my go-to when I haven’t purchased specific ingredients for a salad, and I just need to use up whatever is in the fridge. So, there really are no rules other than a few suggested ingredients and a staple salad dressing.

Here’s what I added to this salad when I made it recently, but you feel free to add whatever else you want:

1 head lettuce - whatever lettuce you have laying around. Arugula, spinach, romaine, etc.

1 whole avocado, diced

1 whole apple, diced

A large handful of walnuts

Some sliced chicken from leftovers (again, use what you have!)

1 medium carrot, sliced

Some crumbled goat cheese (optional, depending on if you eat dairy)

Wash all of the ingredients well, dice them up and toss them into a large bowl. You can add any other ingredients that you have on hand, since this is all about tossing in the kitchen sink! You could add celery, orange slices, almonds, slices of sausage, tuna, salmon, feta, raisins, gogi berries…honestly the sky is your limit!

The Dressing:

2 tbsp Apple Cider Vinegar

2 tsp raw unpasteurized honey (or maple syrup if you’re looking for a Canadian flavour)

1-2 tsp dijon mustard

A dash of salt and pepper

A dash of some herbs de province

1/4-1/3 cup of olive oil

Put the vinegar, honey, mustard, and spices into a bowl and whisk briefly. Once incorporated, slowly drizzle the olive oil into the bowl with one hand while you whisk quickly with the other. Another simple method is to throw all of the ingredients into a mason jar, cap on the lid, and shake!

Add the dressing to the salad however you prefer (i.e. in a cup on the side, or drizzled over the whole bowl of salad).

My favourite thing about this salad is the dressing. The apple cider vinegar and the raw honey are great for your body, and specifically your gut. However, if you use maple syrup then you’ll have a really lovely flavour and maple syrup is still much better for you than processed cane sugar.
