Lemon Chia Pudding
Like many, I’ve been trying to find unique ways to use things that have been hiding in the back of my pantry. Given that we currently need to stretch our groceries to last longer, it can be hard to get creative with our meals.
This snack was easy and relied on ingredients that I always have on hand: chia seeds, yogurt, maple syrup, and lemons. I also had some canned coconut milk that I used which was handy because it keeps in the pantry forever.
This tastes like a lemon pie, so it could easily be a breakfast, snack or dessert!
Ingredients:
1/4 cup chia seeds
2 tablespoons fresh squeezed lemon juice
1 whole can coconut milk
2-3 tablespoons of maple syrup (or more if you like it sweeter)
1/3 cup plain greek yogurt
Instructions:
Place the chia seeds, lemon juice and coconut milk in a bowl and let sit for about an hour. Then mix the maple syrup and greek yogurt together and fold that mixture into the chia seeds. Divide into individual cups and enjoy! Top it with whatever you want. I had some chocolate rice cereal clusters, which seems like an odd pairing but it worked!
